Victor worked quickly in his office, so he expected to work quickly in his evening bread class too. He mixed the flour and water before the teacher finished speaking. Then he asked when everyone could put their bread in the oven.
'Not yet,' said the teacher, May. 'First, the dough needs time to grow.' Victor looked at the clock. He had never enjoyed waiting. May gave him a clean bowl and asked him to cover his dough with a cloth.
While they waited, the class learnt how to prepare the baking trays. Victor also helped another student weigh flour for a second loaf. When he returned to his bowl, the dough was much larger. For the first time that evening, he stopped asking about the clock.
His loaf came out of the oven just before the class ended. It was not perfectly round, but it smelled wonderful. Victor wrote the waiting time in his notebook and drew a large line under it. Next week, he would begin more slowly.
